French   -   Mushrooms Tarragon Mustard Cream   adapted from The Vegetarian Bistro

Ingredients
  • 2 Large Onions -- chopped
  • 4 Cloves Garlic -- finely chopped
  • 1 Tablespoon Olive Oil
  • 1 Pound Mushrooms -- quartered
  • Salt -- to taste
  • 1 Lemon Lemon Juice
  • 1/2 Teaspoon Dried Tarragon
  • 1 Cup Half And Half
  • Cayenne -- to taste
  • 2 Tablespoons Dijon Mustard -- (strong)
Directions Saure onions and garlic in oil until goden about 5 minutes.
Add mushrooms, saute 6 minutes.
Add salt and lemon jice, cook 5 minutes.
Sprinkle with tarragon and cream, cook 5 minutes.
Stir in remaining ingredients and serve.
Serves 4
