French   -   New Potato And Young Pea Salad With Goat Cheese   adapted from The Vegetarian Bistro

  • 2 Pounds Tiny New Potatoes
  • 1/2 Cup Peas
  • 5 Medium Shallot -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • Salt And Pepper -- to taste
  • 3 Tablespoons Olive Oil
  • 6 Ounces Goat Cheese -- crumbled
  • 1 Tablespoon Balsamic Vinegar
Directions Cook potatoes in boiling water until tender about 15 minutes. Drain and peel. Combine, still warm potatoes with remaining ingredients and serve.
Serves 4
