French   -   Olive Smashed Potatoes   adapted from Pedaling Through Provence by Sarah Leah Chase

  • 2 Pounds Yukon Gold Potatoes -- Cooked And Mashed
  • 1/3 Cup Olive Oil -- Warmed
  • 2/3 Cup Black Olives -- Chopped
  • Salt And Pepper -- To Taste
Directions Gradually incorporated the oil into the hot potatoes. Fold in the olives and season with salt and pepper. Serve.
