French   -   Pates Au Pistou   adapted from Pedaling Through Provence by Sarah Leah Chase

  • 5 Medium Tomatoes -- Diced
  • 3/4 Cup Basil -- Shredded
  • 6 Cloves Garlic -- Finely Chopped
  • 3/4 Cup Parsley -- Finely Chopped
  • 1/2 Cup Olive Oil
  • 1 1/2 Teaspoons Herbs De Provence
  • Salt And Pepper -- To Taste
  • 1 Pound Fettucine
  • 3 Tablespoons Butter
  • Parmesan Cheese -- To Taste
Directions Combine tomatoes, basil, garlic and parsley in a medium bowl. Toss with olive oil, herbs, salt and pepper. Let stand for 30 minutes. Cook Pasta as directed. Drain and toss with butter. top with sauce and cheese. Serve.
