French   -   Pommes De Fromage De Brebies   adapted from The Vegetarian Bistro

Ingredients
  • 6 Large Baking Potatoes -- boiled & sliced
  • 2 Large Onion -- chopped
  • 3 Tablespoons Olive Oil
  • 7 Cloves Garlic -- finely chopped
  • 1 Teaspoon Herbes De Provence
  • 1 Pound Tomatoes -- diced
  • Salt And Pepper -- to taste
  • 1/4 Teaspoon Saffron
  • 1 Cup Pecorino Romano -- grated
Directions Preheat oven to 375*. Saute onoins in olive oil utnil softened, about 6 minutes. Add garlic, saute 2 minutes. In 2 quart casserole, arrange a double layer of potatoes, 1/2 onions, 1/2 herbes-tomatoes-salt & pepper, repeat, ending with a potato layer. Pat down. Sprinkle saffron on top. Bake 30 minutes. Sprinkle with cheese, return to oven 15 minutes.
