French   -   Porgy Baked On A Flat Plate   adapted from Paula Wolfert's World of Food

  • 2 Large Porgy Fillets
  • Salt And Pepper -- to taste
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Green Peppercorns
  • 3 Tablespoons Chives -- snipped
  • 1 Teaspoon Dried Thyme
  • 1/2 Cup Parsley -- chopped
Directions Season fillets with sald and pepper the brush with oil. Crush peppercorns and mix wiht remaining ingredients. Spread an even layer fo herbs over ech fillet. Place them on baking sheet. Preheat oven to 400*. Bake fish 5 minutes. Serve at once.
