Description  
Ingredients
  • 2 Pounds Pork -- cut into 1 inch cube
  • 3 Large Onions -- chopped
  • 10 Cloves Garlic -- chopped
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Flour
  • 1 Cup White Wine
  • 1/4 Cup Cognac -- (or brandy)
  • 1 Cup Chicken Broth
  • 1 Can Tomato Puree
  • 1 Bay Leaf
  • 1/2 Teaspoon Dried Thyme
  • Salt And Pepper -- to taste
  • Nutmeg -- to taste
  • 2 Tablespoons Dried Parsley
Directions Saute pork onions and garlic in oil, about 5 minutes. Add flour, cook 1 minute. Stir in 1 and cognac, bring to boil. Stir in broth and puree. Add Spices, simmer covered for 45 minutes.
Serves 4
