Ingredients
|
- 2 Pounds Pork -- cut into 1 inch cube
- 3 Large Onions -- chopped
- 10 Cloves Garlic -- chopped
- 3 Tablespoons Olive Oil
- 1 Tablespoon Flour
- 1 Cup White Wine
- 1/4 Cup Cognac -- (or brandy)
- 1 Cup Chicken Broth
- 1 Can Tomato Puree
- 1 Bay Leaf
- 1/2 Teaspoon Dried Thyme
- Salt And Pepper -- to taste
- Nutmeg -- to taste
- 2 Tablespoons Dried Parsley

Directions
|
Saute pork onions and garlic in oil, about 5 minutes. Add flour, cook 1 minute. Stir in 1 and cognac, bring to boil. Stir in broth and puree. Add Spices, simmer covered for 45 minutes.
