French   -   Potato Cheese Cakes   adapted from The Vegetarian Bistro

  • 4 Large Potatoes -- cooked
  • 5 Medium Shallot -- chopped
  • 3 Cloves Garlic -- chopped
  • 2 Tablespoons Parsley -- chopped
  • 1 Cup Asiago Cheese -- grated
  • Salt And Pepper -- to taste
  • 1 Tablespoon Olive Oil
Directions When potatoes are cool enough to handle, grate them.
Combine with all but olive oil.
Form 4 thick patties.
In large skillet heat oil then fry patties until brown on both sides.
Serves 4
