French - Potato Cheese Cakes

Ingredients

- 4 Large Potatoes -- cooked
- 5 Medium Shallot -- chopped
- 3 Cloves Garlic -- chopped
- 2 Tablespoons Parsley -- chopped
- 1 Cup Asiago Cheese -- grated
- Salt And Pepper -- to taste
- 1 Tablespoon Olive Oil

Directions
|
When potatoes are cool enough to handle, grate them. Combine with all but olive oil. Form 4 thick patties. In large skillet heat oil then fry patties until brown on both sides.
