French   -   Raw Mushroom Salad In Mustard Sour Cream Dressing   adapted from The Vegetarian Bistro

  • 1 Pound Mushrooms -- thinly sliced
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Chervil -- finely chopped
  • 2 Tablespoons Chives -- finely chopped
  • 2 Tablespoons Extra Strong Dijon Mustard
  • 1/4 Cup Sour Cream
  • Salt And Pepper -- to taste
Directions Toss mushrooms with lemon juice, chervil and chives. Set aside. Mix mustard with sour cream then toss with mushrooms. Season with salt and pepper. Serve withing 2 hours.
Serves 4
