French   -   Red Chili Pasta With Ratatouille   adapted from Hot and Spicy by Marlena Spieler

Ingredients
  • 1/4 Cup Olive Oil
  • 1 Large Onion -- thinly sliced
  • 4 Cloves Garlic -- finely chopped
  • 2 Medium Zucchini -- 1/8 inch thick slice
  • 1 Small Eggplant -- chopped
  • 1 Small Bell Pepper -- finely chopped
  • 2 Medium Jalapeno -- finely chopped
  • 1 Teaspoon Cumin
  • 1 Teaspoon Turmeric
  • 1/2 Teaspoon Curry Powder
  • 1 Large Tomato -- chopped
  • 1/2 Cup Tomato Sauce
  • 3 1/2 Cups Water
  • 3/4 Pound Fresh Red Chili Pasta
  • 3 Tablespoons Sunflower Seeds -- shelled and toasted
  • 1/4 Cup Green Olive -- sliced
  • 2 Tablespoons Cilantro -- finely chopped
  • 1 Medium Lemon -- wedged
Directions Brown onion and garlic in oil until soft. Remove with slotted spoon and set aside. Add zucchini and cook briefly. Remove with slotted spoon. Repeat with eggplant, add more oil if needed. Then proceed to both peppers, cumin, turmeric and curry powder. Add tomatoes, cook briefly. Add tomato sauce and all vegetables to pan. Cook pasta as directed. Toss pasta with vegetable mixture. Garnish with sunflower seeds, olives, cilantro and lemon wedges. Serve.
