French   -   Roast Rack Of Lamb With Lavendar Honey   adapted from Pedaling Through Provence by Sarah Leah Chase

  • 1 Cup Fresh Bread Crumbs
  • 2 1/2 Tablespoons Herbes De Provence
  • 2 Teaspoons Pepper
  • 1 Teaspoon Salt
  • 3 Tablespoons Olive Oil
  • 2 Large Racks Of Lamb
  • 1/2 Cup Lavendar Honey
Directions Preheat oven to 450 degrees. Combine bread crumbs with herbs, salt and pepper. Add olive oil to moisten. Season the lamb with salt and pepper. Transfer to baking dish and roast for 12 minutes. Remove from oven and brush on honey. Sprinkle with bread crumb mixture. Return to the oven for another 10-15 minute for medium rare 20 for medium and 30 for well done. Let rest for 5 minutes. Carve and serve.
