French   -   Saffron Pasta With Rouille And Sweet Basil   adapted from The Vegetarian Bistro

  • 1 Teaspoon Ground Ancho Chili
  • 3 Cloves Garlic
  • 1 Pinch Salt
  • 4 Threads Saffron
  • 1 Large Red Jalapeno
  • 2 Tablespoons Olive Oil
  • 1 Small Red Bell Pepper -- finely chopped
  • 2 Tablespoons Tomato Paste
  • 1 Teaspoon Paprika
  • 1 Lemon Lemon Juice
  • Salt And Pepper -- to taste
  • Cayenne -- to taste
  • 1 Pound Saffron Pasta -- or regular
  • 1/2 Cup Fresh Basil -- thinly sliced
  • Parmesan Cheese -- to taste
Directions Crush garlic in food processor with salt. Add saffron, jalapeno and puree. Add ancho and 1 tablespoon olive oil. Process to a paste. Add red bell pepper, tomato paste, paprika, basil and lemon juice. Process to a paste. Season with salt, pepper and cayenne. Cook pasta as directed. Toss with remaining olive oil and a ladle of the red sauce. Pass the cheese.
