French   -   Sausage Scaled Cod Fillets   adapted from Pedaling Through Provence by Sarah Leah Chase

  • 4 Large Cod Fillet
  • Salt And Pepper -- To Taste
  • 1 Large Egg Yolk -- Beaten
  • 4 Ounces Salami Or Pepperoni
  • 2 Tablespoons Olive Oil
Directions Season fish with salt and pepper. Brush with egg yolk. Press the meat onto the fillets in an overlapping pattern. Heat oil in skillet. Saute meat side down until lightly browned about 4 minutes. Flip and saute for 4 more minutes. Serve.
