French   -   Scrambled Eggs And Wild Mushrooms   adapted from The Vegetarian Bistro

  • 12 Ounces Mixed Wild Mushrooms -- chopped
  • 3 Tablespoons Butter
  • 2 Cloves Garlic -- finely chopped
  • 1 Tablespoon Fresh Parsley -- chopped
  • 1 Tablespoon Fresh Chives -- chopped
  • Salt And Pepper -- to taste
  • 8 Medium Eggs -- beaten
Directions saute mushrooms in butter until soft, add parsley, chives, salt and pepper. stir together well. add eggs and scramble. When eggs are done, serve with a crusty bread.
