French   -   Sherried Mushroom Broth With Varied Mushrooms   adapted from Soup and Bread by Crescent Dragonwagon

  • 6 Cups Chicken Stock
  • 1 Ounce Assorted Dry Mushrooms -- Soaked
  • 1 Large Onion -- Chopped
  • 1 Large Carrot -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Pound Mushrooms -- Chopped
  • 1/3 Cup Sherry
Directions Combine stock, onion, carrot, salt and pepper in a pot. Bring to a boil add fresh mushrooms and simmer for 30 minutes. Chop the soaked mushrooms and add to the soup along with the soaking liquid and sherry. Simmer for 20 minutes and serve.
Serves 4
