French   -   Soupe Aux Legumes   adapted from The Vegetarian Bistro

Ingredients
  • 1/2 Cup Cooked White Beans -- or chickpeas
  • 1 Large Leek -- diced
  • 1 Small Turnip -- diced
  • 1 Small Carrot -- diced
  • 1 Large Potato -- diced
  • 1 Small Zucchini -- diced
  • 2 Stalks Celery -- diced
  • 2 Tablespoons Pine Nuts
  • 3 Cloves Garlic -- finely chopped
  • 2 Medium Bay Leaves
  • 1 Sprig Rosemary
  • 6 Cups Vegetable Broth
Directions In a large saucepan, combine all ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Remove and discard bay leaves and rosemary sprig. Puree the soup, leaving a few chunks of vegetables. Taste and adjust the seasoning and serve.
