French   -   Summer Squash With Paprika Butter   adapted from The Vegetarian Bistro

  • 6 Small Summer Squash -- any kind
  • 1 Teaspoon Paprika
  • 3 Tablespoons Dry White Wine
  • 1 Large Shallot -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 3 Tablespoons Unsalted Butter
  • Salt And Pepper -- to taste
Directions Cut squash into bite-sized pieces. Steam until tender. Set aside, keep warm.
Combine paprika, wine, shallot and garlic in small pan.
Bring to boil. Cook until almost all liquid has evaporated. Remove from heat, add butter. whisk together. Season with salt and pepper. Pour over veggies and serve.
Serves 4
