French   -   Supreme Of Chicken And Olive Soup (France)   adapted from Soup and Bread by Crescent Dragonwagon

Ingredients
  • 4 Cups Chicken Stock
  • 1 Cup White Wine
  • 4 Tablespoons Butter
  • 1 Medium Onion -- Chopped
  • 1 Medium Carrot -- Chopped
  • 1 Stalk Celery -- Chopped
  • 5 Tablespoons Flour
  • 1/2 Cup Peas
  • 1/2 Cup Rice -- Cooked
  • 1/4 Cup Black Olives -- Sliced
  • 1/4 Cup Green Olive -- Sliced
  • 3 Cups Chicken -- Cooked And Chopped
  • Salt And Pepper -- To Taste
  • Parsley -- For Garnish
Directions Combine stock and wine, bring to a boil. Saute onion in butter for 5 minutes. Add carrot and celery and saute for 10 minutes. Sprinkle vegetables with flour and saute for 2 minutes. Add onion mixture to the soup. Simmer for 20 minutes. Add peas, rice, and both types of olives. Heat through. Add salt, pepper and parsley. Serve.
