French   -   Swiss Cheese Fondue   adapted from unknown

  • 2 Cups Swiss Cheese -- shredded
  • 2 Cups Gruyere Cheese -- shredded
  • 1 Tablespoon Cornstarch
  • 1 Clove Garlic -- minced
  • 1 Cup Dry White Wine
  • 1 Tablespoon Lemon Juice
  • 3 Tablespoons Sherry
  • 1/2 Teaspoon Salt
  • 1/8 Teaspoon White Pepper
  • French Bread Loaf -- cubed
Directions Toss cheese with cornstarch until coated. Add wine and garlic to a pan. Heat over low heat until bubbles rise to surface (do not boil). Stir in lemon juice, gradually add cheese, stirring contantly. When cheese is melted, stir in all other ingredients.
If fondue becomes thick once transferred to fondue pot, add 1/2 cup of heated wine.
Serves 6
