French   -   Vegetarian Garbure   adapted from Classic Vegetarian Cuisine

Ingredients
  • 1 Can Navy Beans
  • 2 Tablespoons Olive Oil
  • 1 Large Potato -- scrubbed & diced
  • 4 Medium Carrots -- diced
  • 2 Medium Leeks -- diced
  • 1 Teaspoon Marjoram
  • 1 Teaspoon Thyme
  • 1/2 Teaspoon Paprika
  • 3 3/4 Cups Vegetable Stock, Condensed
  • Salt And Pepper -- to taste
  • 1 Small Cabbage -- finely shredded
Directions Saute potato, carrots & leek for 5 minutes. Add herbs and spices and cook 1 minutes. Add beans and stock and simmer 20 minutes. Add cabbage and cover and cook 20 more minutes.
Serves 4
