French   -   Warm Chickpea Salad With Spring Onions   adapted from Cuisine a la Vapeur by Jacques Maniere

  • 2 Cans Chickpeas -- drained
  • 3 Tablespoons White Wine Vinegar
  • 1/2 Teaspoon Cumin Seed
  • 1/2 Cup Olive Oil
  • 1/8 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 3 Large Scallion -- finely chopped
  • 2 Tablespoons Parsley -- finely chopped
Directions Steam chickpeas in steamer for 5 minutes. Whisk together vinegar, cumin, oil, salt and pepper. Add warm peas to scallions. Pour on vinaigrette and toss. Sprinkle with parsley and serve.
