German   -   Allemande Noodles   adapted from Kitchen Witch's Cookbook

  • 3 Cups Chicken -- diced
  • 8 Ounces Mushroom -- sliced
  • 2 Tablespoons Olive Oil
  • 1 Cup Chicken Broth
  • 1/4 Teaspoon Nutmeg
  • 3 Medium Egg Yolk
  • 1/3 Cup Cream
  • 1 Tablespoon Butter -- melted
  • 1 Tablespoon Flour
  • Lemon -- for garnish
  • 12 Ounces Spinach Egg Noodles -- cooked
Directions brown the meat and mushrooms in oil. mix in the broth and nutmeg. Simmer 30 minutes. Beat the egg yolks and cream in a small bowl. slowly stir into the meat mixture. Mix the butter and flour in small bowl until smooth. add a little at a time, stirring constantly. Stir until sauce is thick. Remove from heat. Serve over the noodles and garnish with lemon wedges.
