Directions

Preheat oven to 350. Lightly cook apples in saucepan so they remain firm. Mix together egg white, apple juice and water. Place phyllo pastry, layer on layer, on non-stick baking paper on baking sheet. Brush in between every second sheet of phyllo with some of the egg-white mixture. Sprinkle with a little oat bran. In center of pastry, make a layer of 1/2 the dates and leave enough down both sides to fold over later. Add layer of apples and another layer of dates. Sprinkle with zest and juice. Brush ends of pastry with egg-white mixture and fold over fruit mixture. Brush sides of pastry with egg-wash and fold over leaving a strip down middle of fruit showing. Brush over all with egg-wash. Sprinkle with remaining oat bran and sprinkle cinnamon over top. Bake 15-20 minutes and slice and serve warm.
