German   -   Baden Leek Soup   adapted from German Cooking

  • 4 Medium Leeks -- chopped
  • 1/4 Cup Olive Oil
  • 2 Large Onion -- chopped
  • 6 Cups Chicken Broth
  • 1/2 Teaspoon Salt
  • 1 Cup Milk
  • 1 Cup Ham -- cubed
Directions saute leeks and onion in olive oil until onion is transparent. add broth and salt. boil, reduce heat and simmer 10 minutes. add milk and ham and heat until milk is hot but not boiling.
Serves 6
