Ingredients

- 6 Medium Eggs -- Beaten
- 3/4 Cup Emmental Cheese -- Shredded, Optional
- 2 Tablespoons Butter
- 1 Medium Onion -- Chopped
- 8 Ounces Mushroom -- Chopped
- 1 Cup Ham -- Chopped
- 3 Large Potatoes -- Cooked And Chopped
- 1/2 Cup Peas
- 1/4 Teaspoon Pepper
- Paprika -- To Taste

Directions

Melt butter in skillet, add onions, mushrooms and ham. Saute for 10 minutes. Add potatoes and peas, simmer for 2 minutes. Combine eggs with cheese if using. Pour eggs over the vegetables. Simmer until the eggs are set on the bottom. Sprinkle with pepper. Place eggs under a broiler and cook until it just browns on top. Sprinkle with paprika and serve.
