German   -   Bauernfrufstuck (Farmer's Broiled Omelet)   adapted from German Cooking

  • 6 Medium Eggs -- Beaten
  • 3/4 Cup Emmental Cheese -- Shredded, Optional
  • 2 Tablespoons Butter
  • 1 Medium Onion -- Chopped
  • 8 Ounces Mushroom -- Chopped
  • 1 Cup Ham -- Chopped
  • 3 Large Potatoes -- Cooked And Chopped
  • 1/2 Cup Peas
  • 1/4 Teaspoon Pepper
  • Paprika -- To Taste
Directions Melt butter in skillet, add onions, mushrooms and ham. Saute for 10 minutes. Add potatoes and peas, simmer for 2 minutes. Combine eggs with cheese if using. Pour eggs over the vegetables. Simmer until the eggs are set on the bottom. Sprinkle with pepper. Place eggs under a broiler and cook until it just browns on top. Sprinkle with paprika and serve.
