German   -   Braised Stuffed Beef Rolls   adapted from German Cooking

  • 8 Slices Beef Round -- thinly sliced
  • 1 Medium Onion -- chopped
  • 3 Strips Bacon -- chopped
  • 1/4 Cup Flour
  • 1 Teaspoon Paprika
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 2 Tablespoons Olive Oil
  • 1 Medium Carrot -- chopped
  • 1 Stalk Celery -- chopped
  • 1 Medium Leek -- chopped
  • 1/4 Cup Parsley -- chopped
  • 1 Cup Hot Water
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Cold Water
Directions divide onion and bacon among the 8 beef slices. placing them across one end. Roll up and secure with toothpick. dredge in flour paprika, salt and pepper. saute beef rolls in olive oil until brown on all sides. add vegatable and hot water. cover simmer, 2 hours. adding water if needed. remove rolls from heat and keep warm. add cornstarch and cold water to pan juices and cook until sauce has thickened. serve sauce over rolls.
