German   -   Gemuse Und Gerstensuppe (Vegetable Barley Soup)   adapted from German Cooking

Ingredients
  • 1/4 Cup Butter
  • 1 Large Onion -- Chopped
  • 2 Stalks Celery -- Chopped
  • 2 Large Carrot -- Chopped
  • 2 Quarts Chicken Stock
  • 1 Medium Zucchini -- Chopped
  • 1 Small Cauliflower -- Chopped
  • 1 Medium Potato -- Chopped
  • 1 Cup French-Style Green Beans
  • 1 Can Tomatoes -- Chopped
  • 1 Cup Barley
  • 1 Teaspoon Salt
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Pepper
  • 1 Medium Bay Leaf
  • 1/2 Teaspoon Clove
  • 3 Tablespoons Parsley -- Chopped
  • Dill -- Chopped
Directions Saute onion, celery and carrots in butter for 7 minutes. Add broth, zucchini, cauliflower, potato, green beans, tomatoes and barley. Cover and simmer for 15 minutes. Add salt, oregano, pepper, bay leaf, cloves and parsley. Simmer for 20 minutes. Remove bay leaf. Sprinkle with dill and serve.
