German   -   Gewurzkuchen (Spice Cake)   adapted from German Cooking

  • 1 1/3 Cups Honey
  • 1 Cup Sugar
  • 1/2 Cup Butter
  • 4 Cups Flour
  • 1 1/2 Teaspoons Baking Soda
  • 1/4 Teaspoon Salt
  • 2 Teaspoons Cinnamon
  • 2 Teaspoons Ground Cloves
  • 1 Teaspoon Ginger
  • 2 Medium Eggs
  • 1/4 Cup Milk
  • 1/2 Cup Chopped Walnuts -- Optional
  • Powdered Sugar
Directions Combine honey, sugar and butter. Bring to a boil, remove from heat and let cool. Combine flour, baking soda, salt, cinnamon, cloves and ginger. Add honey mixture, eggs, milk, and walnuts. Mix into a dough. Turn dough out onto a floured board, knead until smooth about 15 minutes. Refrigerate for 2 hours or up to 2 weeks. Roll out dough into a 13X9 inch rectangle. Place into a baking pan and bake for 45 minutes at 325 degrees. Cool for 10 minutes. Sprinkle with powdered sugar and serve.
