German   -   Kartoffeln Mit Basilkumsose (Potatoes With Basil Sauce)   adapted from German Cooking

  • 2 Pounds New Potatoes -- Quartered
  • 2 Cloves Garlic -- Chopped
  • 1 Bunch Chives -- Chopped
  • 1 1/2 Cups White Wine
  • 1/4 Cup Tarragon Vinegar
  • 1 Teaspoon Basil
  • Salt And Pepper -- To Taste
  • 2 Teaspoons Dijon Mustard
  • 2 Tablespoons Basil -- Chopped
Directions Combine potatoes, garlic, chives, wine, vinegar, basil, salt and pepper in a saucepan. Bring to a boil and simmer for 15 minutes. Remove potatoes and keep warm. Simmer sauce for another 10 minutes until reduced to half. Add mustard and basil to the sauce. Simmer for 5 minutes. Spoon sauce over potatoes and serve.
