Ingredients
|
- 3 Pounds Chicken -- Cubed
- 1 Cup White Beans
- 1 Large Onion -- Chopped
- 1 Medium Bell Pepper -- Chopped
- 2 Quarts Chicken Broth
- 1/2 Teaspoon Pepper
- 1 Tablespoon Salt
- 1/2 Teaspoon Crushed Red Pepper
- 2 Cans Tomatoes -- Chopped
- 1 Large Eggplant -- Cubed

Directions
|
Combine, chicken, peas, onions, peppers, broth, salt, pepper and red pepper in a pot. Simmer for 20 minutes. Add tomatoes and eggplant. Simmer for 15 minutes. Serve.
