Ghanan   -   Chicken Vegetable Soup (Ghana)   adapted from The African Cookbook by Bea Sandler

Ingredients
  • 3 Pounds Chicken -- Cubed
  • 1 Cup White Beans
  • 1 Large Onion -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 2 Quarts Chicken Broth
  • 1/2 Teaspoon Pepper
  • 1 Tablespoon Salt
  • 1/2 Teaspoon Crushed Red Pepper
  • 2 Cans Tomatoes -- Chopped
  • 1 Large Eggplant -- Cubed
Directions Combine, chicken, peas, onions, peppers, broth, salt, pepper and red pepper in a pot. Simmer for 20 minutes. Add tomatoes and eggplant. Simmer for 15 minutes. Serve.
