Ghanan   -   Smoked Fish Stew (Ghana)   adapted from The African Cookbook by Bea Sandler

  • 1 Medium Onion -- Thinly Sliced
  • 3 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Quart Chicken Stock
  • 2 Pounds Smoked Chinook Salmon -- Flaked
  • Rice -- Cooked
Directions Saute onion in oil until browned. Add tomatoes, tomato paste, red pepepr and broth. Simmer for 15 minutes. Add fish and simmer for 10 minutes. Serve over rice.
