Ghanan - Smoked Fish Stew (Ghana)

Ingredients
|
- 1 Medium Onion -- Thinly Sliced
- 3 Tablespoons Olive Oil
- 1 Can Tomatoes -- Chopped
- 1 Can Tomato Paste
- 1/2 Teaspoon Crushed Red Pepper
- 1 Quart Chicken Stock
- 2 Pounds Smoked Chinook Salmon -- Flaked
- Rice -- Cooked

Directions
|
Saute onion in oil until browned. Add tomatoes, tomato paste, red pepepr and broth. Simmer for 15 minutes. Add fish and simmer for 10 minutes. Serve over rice.
