Greek   -   Bakaliaros Me Spanaki (Cod With Spinach And Garlic Sauce)   adapted from Greek Cooking for the Gods

  • 1 Cup Skordalia (Greek Garlic Sauce)
  • 6 Tablespoons Olive Oil
  • 2 Pounds Spinach -- chopped
  • 8 Medium Green Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 1 Pinch Oregano
  • 6 Medium Cod Steaks
  • 1 Lemon Lemon Juice
Directions prepare garlic sauce and chill. preheat oven to 350 degrees. saute onions garlic, oregano and spinach until spinach is tender about 10 minutes. remove from heat. Oil a baking dish large enough for steaks to fit side by side. spread spinach mixture evenly on bottom. arrange steaks on top. drizzle with lemon juice and olive oil . Bake 35 to 45 minutes until fish flakes. serve each steak on a bed of spinach with sauce on top of steaks and pass remaining sauce.
