Greek   -   Beef With Artichokes And Pine Nuts   adapted from Regional Cuisines of Greece

  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic -- finely chopped
  • 2 Pounds London Broil
  • 1 Cup Beef Broth
  • 2 Cans Artichoke Hearts
  • 1/2 Cup Pine Nuts
  • Salt And Pepper -- to taste
  • 1 Teaspoon Cumin
Directions Heat oil in skillet. Add garlic and beef and saute over high heat until the beef is well browned on all sides. Add broth, artichokes, pine nuts and seasonings. Bring to a boil. Lower heat, cover and simmer for 15 minutes. Slice beef and arrange on a platter. Garnish with artichokes and pour sauce over the top. Serve with rice.
