Greek   -   Chicken Artichoke Casserole   adapted from Regional Cuisines of Greece

  • 3 Pounds Chicken -- in large pieces
  • 1 Large Onion -- finely chopped
  • 6 Tablespoons Butter
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 8 Ounces Mushroom -- sliced
  • 2 Tablespoons Flour
  • 1 Cup Chicken Broth
  • 1/2 Cup White Wine
  • 1 Can Artichoke Hearts
Directions Preheat oven to 375. In large skillet, brown the chicken and onion in 4 tablespoons of butter. Season with salt and pepper. Remove chicken and onions and put in oven proof dish. Add remaining butter to a skillet and saute the mushrooms for 5 minutes. Sprinkle flour over the mushrooms and stir in broth and wine. Simmer until thick and smooth. Arrange artichokes with the chicken. Pour mushroom sauce over the chicken. Cover and bake for 40 minutes.
