Greek   -   Chicken With Feta And Green Olives   adapted from Classic Main Courses

  • 4 Large Chicken Breasts
  • Flour
  • Salt And Pepper
  • 6 Tablespoons Olive Oil
  • 4 Large Onions -- chopped
  • 14 Ounces Tomatoes -- chopped
  • 1/2 Cup Boiling Water
  • 1 Cup Green Olive -- pitted Drained
  • 1 Tablespoon Red Wine Vinegar
  • 4 Ounces Feta Cheese -- thinly sliced
Directions Deredge chicken breasts in flour and season with salt and pepper on both sides. Saute chicken in oil, until lightly brown, about 5 mintues per side. Remove from pan, set aside. Add onions to skillet, saute until softeneed. Return chicken to pan, Add tomaotes and boiling water. Cover, simmer, 30 minutes. In last 10 minutes of cooking itme, Add olive and vinegar. Place a slice of feta ato peach chiken breast, and cook uncovered 10 mintues or until cheese is melted.
