Greek   -   Chickpea Tarts   adapted from Regional Cuisines of Greece

  • 4 Cups Flour
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Salt
  • 1 Cup Oil
  • 1 Medium Egg -- beaten
  • 3/4 Cup Warm Milk
  • 1 Can Chickpeas
  • 1 Medium Onion -- finely chopped
  • 2 Tablespoons Butter
  • 1 Medium Egg -- beaten
  • 2 Tablespoons Parsley -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Oregano
  • 2 Tablespoons Kefalotiri Cheese -- or romano
  • Oil -- for frying
Directions Make the pastry by mixing flour, baking powder, salt, oil, egg and milk to form a soft dough. Roll out to 1/8 thickness and cut into 2 inch rounds. Mash chickpeas, saute the onion in butter and add to the chickpeas. Add remaining ingredients except oil. Add enough water to form a soft mixture. Add filling to each round, fold over and seal. Deep fry in hot oil until golden brown.
