Greek   -   Fakes (Corfu)   adapted from A Kitchen in Corfu by Chatto and Martin

  • 1 Pound Lentils
  • Pepper -- to fill
  • 3 Medium Bay Leaf
  • 1 Head Garlic -- chopped
  • 1 Pinch Oregano
  • 1/2 Tablespoon Salt
  • 1/2 Tablespoon Olive Oil
  • 1/2 Tablespoon White Wine Vinegar
Directions Soak lentils in water for 1 hour. Add garlic, salt, pepper, oregano and bay leaves. Boil until soft about 30 minutes. Take off the heat, add remaining ingredients and serve.
Serves 4
