Greek   -   Faki (Lentil Soup With Turnip Greens)   adapted from Versatile Grain and Elegant Bean

Ingredients
  • 1 1/2 Cups Brown Lentils
  • 8 Cups Chicken Stock
  • 2 Stalks Celery -- Chopped
  • 1 Medium Bay Leaf
  • 1 Teaspoon Oregano
  • 3 Tablespoons Olive Oil
  • 3 Cloves Garlic -- Chopped
  • 1 Medium Onion -- Chopped
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Parsley -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Pound Turnip Greens Or Spinach -- Chopped
  • 2 Tablespoons Red Wine Vinegar
  • 1/4 Teaspoon Tabasco Sauce
Directions Bring lentils, stock, celery, bay leaf and oregano to a boil. Cover and simmer for 30 minutes. Remove and discard bay leaf. In a frying pan, saute onions and garlic in oil for 5 minutes. Add salt, pepper, parsley and tomatoes. Simmer for 5 minutes. Add onion mixture to the lentils. Simmer for 5 minutes. Add greens and simmer for 10 minutes. Add vinegar and tabasco and serve.
