Greek   -   Greek Artichoke Salad   adapted from Regional Cuisines of Greece

Ingredients
  • 2 Cans Artichoke Hearts -- drained
  • 1/3 Cup Olive Oil
  • 1/3 Cup Lemon Juice
  • 1 Head Romaine Lettuce -- torn
  • 2 Tablespoons Dried Mint
  • 4 Medium Green Onion -- finely chopped
  • 1 Cup Black Olives -- sliced
  • 2 Large Tomatoes -- wedged
  • Salt And Pepper -- to taste
Directions Marinate artichokes in olive and lemon juice for 3 hours. Combine lettuce, mint, onions, olives and tomatoes in a large salad bowl. Add artichokes with the marinade and season with salt and pepper. Serve.
