Greek   -   Greek Marinated Mushrooms   adapted from Greek Cooking for the Gods

  • 1/2 Cup Olive Oil
  • 1/3 Cup Lemon Juice
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Fennel
  • 1 Clove Garlic
  • 1 Celery Stalk -- chopped
  • 10 Black Peppercorns
  • 1 Bay Leaf
  • 1/2 Cup Water
  • 2 Pounds Button Mushrooms -- fresh
  • Parsley -- to garnish
Directions In saucepan combine all mbut mushrooms & parsley. Boil, cover, reduce heat, simmer 10 minutes. Meanwhiel remove stems from mushrooms, add caps to simmering liquid and cook 5 minutes. Remove mushrooms with slotted spoon and arrange on seving dish. Raise heat and boil liquid until reduced and thickened. Strain & pour over mushrooms. Cover and chill well. Garnish with parsley and serve.
