Greek   -   Greek Roasted Potatoes   adapted from The Occasional Vegetarian

  • 15 Small New Potatoes
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Water
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Oregano -- optional
Directions preheat oven to 425 degrees. cut potatoes into 6ths but do not peel. In large bowl, mix oil, water, lemon juice and potatoes. Lightly grease a baking dish, add potatoes and place in oven. bake for 45 minutes and shake once or twice to make sure all sides get crispy. 5 minutes before they are finished add oregano.
