Greek   -   Greek Shrimp Fondue   adapted from New International Fondue Cookbook

  • 2 Tablespoons Olive Oil
  • 4 Medium Green Onion -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 15 Ounces Tomato Puree
  • 1/3 Cup White Wine
  • 1 Teaspoon Oregano
  • 1/8 Teaspoon Red Pepper Flakes
  • 6 Ounces Feta Cheese -- crumbled
  • 2 Tablespoons Parsley -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Pound Medium Shrimp -- cooked
  • 12 Small Potatoes -- cooked
Directions heat olive oil in fondue pot. saute garlic and onions until softened. Add puree, pepper flakes, wine and oregano. Heat. Add feta. Continue cooking until mostly melted. Add parsley, salt and pepper. Using remaining ingredients as dipping agents.
Serves 4
