Greek   -   Greek Spinach And Rice   adapted from super foods cookbook

  • 1 Large Onion -- finely chopped
  • 2 Tablespoons Stock
  • 1 Pound Spinach -- chopped
  • 3 Cups Cooked Rice -- cold
  • 1 Cup Lowfat Cottage Cheese
  • 1/4 Cup Cheddar Cheese -- shredded
  • 2 Medium Eggs
  • 3 Tablespoons Fresh Parsley -- chopped
  • 1 1/2 Teaspoons Dill Weed
Directions saute onion in stock until soft, add spinach, cook over low heat until wilted and liquid has evaportated. in a large bowl combine remaining ingredients. fold in spinach mixture. coat 1 1/2 quart cassarole dish with non stick spray. fill with mixture at 375 for 20-25 minutes until heated through and light brown on top.
