Greek   -   Lentil And Feta Salad   adapted from vegetariana

Description
Ingredients
  • 1 Cup Lentils -- cooked & cooled
  • 1 Medium Green Pepper -- strips
  • 1 Medium Tomato -- diced
  • 1 Small Red Onion -- chopped
  • 1/2 Pound Feta Cheese -- crumbled
  • 1/4 Cup Olive Oil
  • 2 Tablespoons Lemon Juice
  • 1 Teaspoon Dried Basil
  • 1 Teaspoon Dill
  • Pepper -- to taste
  • Lettuce Leaves
  • Black Olives
Directions Combine lentils once cooled with remaining ingredients except lettuce & olives. Allow to stand refrigerated 1 hour. Prepare a bed of lettuce fore each, garnish with olives, and top with lentil mixture.
Serves 6
