Ingredients
  • 1 Pound Dried Lima Beans
  • 1/2 Cup Olive Oil
  • 1 Large Onion -- chopped
  • 2 Cloves Garlic -- chopped
  • 2 Medium Carrots -- chopped
  • 1 Stalk Celery -- chopped
  • 1/2 Cup Parsley -- chopped
  • 2 Teaspoons Dill
  • 1 Teaspoon Fines Herbes
  • 2 Tablespoons Lemon Juice
  • 16 Ounces Plum Tomatoes
  • 2 Cups Chicken Stock
  • Salt And Pepper -- to taste
  • 2 Cups Water
  • 8 Ounces Spaghetti
  • Parmesan Cheese -- to taste
Directions Soak beans over night. Discard water. Boil beans in 2 cups water. Boil 25 minutes. Darain, reserve water, set aside. In dutch oven, add oil, onion, garlic, carrots, celery & parsley. Saute until onion is clear. Add all but beans & water. Boil, reduce heat 20 minteus uncovered. Add beans & water, simmer until tender 25 more minutes. Serve over pasta and top with parmesan cheese.
