Greek   -   Mediterranean Pot Stickers   adapted from Vegetarian Times

  • 2 Cups Lentils -- Cooked
  • 1/2 Cup Feta Cheese -- Crumbled
  • 1 Small Onion -- Finely Chopped
  • 3 Cloves Garlic -- Finely Chopped
  • 1 Lemon Lemon Juice
  • 1/4 Teaspoon Pepper
  • 1 Tablespoon Dill
  • 1 Package Egg Roll Skins
  • 2 Tablespoons Water
  • 2 Teaspoons Olive Oil
  • 1/2 Cup Hot Water
  • Yogurt -- For Garnish
Directions Combine lentils, feta, onion, dill, garlic, lemon juice and pepper. Place 2 teaspoons of filling into a wrapper. Seal with the water. Saute the pot stickers in oil until brown on both sides, just lightly. Add hot water and boil for 10 minutes. Serve.
