Greek   -   Skordalia (Greek Garlic Sauce)   adapted from Greek Cooking for the Gods

  • 6 Cloves Garlic -- chopped
  • 2 Cups Potato -- cooked and mashed
  • Salt -- to taste
  • 1 Cup Olive Oil
  • 1/2 Cup White Wine Vinegar
Directions In food processor, mince garlic then add potatoes and salt and process until smooth. slowly add vinegar and oil in alternating thin steams. Blend until thick and creamy if sauce is too thick add some water.
Variation Combine 1/2 cup garlic sauce with 1 cup of yogurt and 1 teaspoon of almond extract. mix well and chill. Serve as dip with an assortment of crackers.
Other serving suggestions.
good on seafoods, vegatables such as fried zucchini, califlower or steamed swiss chard. make canapes using pita bread triangles and cocktail shrimp.
