Greek   -   Spanakorizo (Spinach & Rice)   adapted from Greek Cooking for the Gods

  • 1 Bunch Spinach -- washed & torn
  • 1/3 Cup Olive Oil
  • 2 Medium Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Cup Rice
  • 2 Tablespoons Tomato Paste
  • 2 Bay Leaves
  • Salt And Pepper -- to taste
  • 2 Cups Stock
Directions In large sauce pan, saute in oil onions, garlic and rice. Saute until onions are done, Stir in tomato paste everthing else. Cover and simmer 20 minutes until rice is done, discard bay leaves & serve.
