Greek   -   Spinach And Feta Salad   adapted from Regional Cuisines of Greece

Ingredients
  • 2 Pounds Fresh Spinach -- torn
  • 1/2 Cup Olive Oil
  • 2 Tablespoons White Wine Vinegar
  • 2 Tablespoons Lemon Juice
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Dry Mustard
  • Salt And Pepper -- to taste
  • 4 Medium Hard Boiled Eggs -- sliced
  • 1/4 Pound Feta Cheese -- crumbled
  • 2 Medium Green Onion -- finely chopped
Directions Blend together oil, vinegar, lemon juice and spices. Pour dressing over spinach. Mix well. Top with eggs, cheese and onions. Toss and serve.
Serves 4
