Greek   -   Taverna Shrimp   adapted from The Universal Kitchen by Elisabeth Rozin

Ingredients
  • 1 Medium Onion -- Chopped
  • 4 Cloves Garlic -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 1 Lemon Lemon Juice
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Pound Shrimp
  • 1/2 Cup Feta Cheese -- Optional
  • 4 Large Bread Slices
  • Olives -- Chopped
  • Parsley -- Chopped
Directions Saute onion and garlic in oil for 5 minutes. Add tomatoes, lemon juice, oregano, salt and pepper. Bring to a simmer and cook for 15 minutes. Add shrimp and cook until the shrimp turn pink. Sprinkle with feta and remove from heat. Toast bread in toaster or in broiler. Spoon over shrimp sauce, sprinkle with olives and parsley and serve.
